The Spanish name of this classic Cuban dish translates to “Moors and Christians,” and alludes to the long history of wars between the Moors (represented by the beans) and the Spaniards (the rice). It’s an everyday dish in Cuba, and an everyday reminder of the Spanish influence on that country. We keep our version simple by adding onions, green pepper, and mild spices.

Excellent with spicy sausage, grilled or roasted beef, fish, tofu, and poultry, and a superb burrito filler!
